Chessy Cauliflower Patties

Cheesy Cauliflower Patties
(6-8 servings)


1 large head Fresh Cauliflower
2 large Fresh Eggs
½ cup Cheddar Cheese, grated
½ cup Panko Bread Crumbs
½ tsp. Cayenne Pepper (optional and amount adjustable)
¼ tsp. Salt
as needed Olive Oil


Core and cut cauliflower into florets.  Place in a large sauce pan with water and boil about 10 minutes or until tender.  Drain and mash cauliflower in sauce pan.  Add eggs, panko, cayenne and salt to mashed cauliflower.  Mix well and portion into patties about 3 inches in diameter.  Coat griddle or skillet with oil over medium-high heat.  Place patties on the surface and cook until golden brown (about 3 minutes per side) on each side.  Keep the done ones warm if having to cook in batches.

Note:               Number of servings will depend on size of cauliflower head and patties.
