Cauliflower Au Gratin
(8 servings)
Ingredients:
2 small heads Fresh Cauliflower
4 tbsp. Unsalted Butter
¼ cup All-Purpose Flour
2 cups Milk
1½ cups Shredded Sharp Cheddar Cheese
1/8 tsp. Nutmeg
¼ tsp. Salt
¼ tsp. Black Pepper
½ cup Bread Crumbs
¼ cup Fresh Parsley, chopped
2 tbsp. Olive Oil
Directions:
Core and cut cauliflower into bite-size pieces. Put in a large pot, steam for 5 to 6 minutes or until tender-crisp. Drain and set aside. In a medium sauce pan over medium-heat, melt butter and add flour. Whisk and cook 2 minutes. Then add milk slowly as you whisk and bring to a boil. Reduce heat to a simmer, stirring occasionally for 6 to 8 minutes or until sauce thickens. Add cheese, nutmeg, salt and pepper stirring until smooth. Now add the cauliflower, combine and transfer into a buttered 1½ quart baking dish. In a small bowl, combine bread crumbs, parsley and oil. Sprinkle over cauliflower and place in a pre-heated 375 degree oven for 30 minutes or until bubbly and lightly browned.
Note: It is best to use fresh nutmeg and grate it yourself. If it is not possible, than use already ground nutmeg.
