Cauliflower Side Dishes to Try.


As we are ending the month of February, winter is still with us and spring is around the corner.  We are still looking for some comfort foods before starting our lighter eating of spring foods.

So this week I have a couple of recipes that feature “Cauliflower” and “Cheese” to help finish up the comfort food season.

The first is a recipe for “Cauliflower Au Gratin” and takes about 45 minutes start to finish.  It’s an easy and quick dish to serve as your veggie for tonight’s dinner.  Check it out on Wednesday.

For Thursday, I have a cauliflower dish that runs along the line of “Potato Pancakes” but you’re using cauliflower instead of potatoes.  It’s called “Cheesy Cauliflower Patties” and can be done in less than 30 minutes.  You cook and mash the cauliflower before combining with a few other ingredients and frying on the griddle or in a skillet.

I hope this gives you some ideas besides roasting root vegetables for an accompaniment to your entrée.

There’s nothing wrong with roasting root vegetables.  In fact, I just had a new combination the other night.  We used sweet potatoes, turnips, carrots, mushrooms and onion with a little seasoning and some olive oil.  They were delicious too.
