Chicken Nuggets (GF)

Chicken Nuggets (GF)
(6-8 servings)


2 lb. Boneless Skinless Chicken Breasts
3 tbsp. GF Flour, plus a little extra
¼ tsp. Salt
¼ tsp. Black Pepper
2large Fresh Eggs, lightly beaten
1 cup Polenta
2 tsp. Paprika
Pan Spray


Cut chicken into bite-sized pieces of about 1 ounce.  Mix flour, salt and pepper in a gallon zip-lock bag.  Toss chicken pieces in flour in bag.  Place beaten egg in a small bowl.  Mix polenta and paprika in a small bowl.  Take chicken pieces and dip into egg and then polenta to coat before placing on a baking sheet that has been sprayed.  Once all the chicken has been placed on baking sheet, put in a pre-heated 400-degree oven for 20 minutes.  Bake until golden turning pieces halfway through the baking process.  Don't overcook the chicken.  Remove and serve with your favorite dipping condiments.

Note:               You could use boneless skinless chicken thighs.  You may need to adjust baking time slightly.
