Spanish Garlic Bread


Spanish Garlic Bread
(12 servings)


Ingredients:

8 tbsp. (1 stick) Unsalted Butter, room temperature
½ cup Pimento-Stuffed Green Olives, chopped
2 tbsp. Fresh Garlic, minced
1 loaf French Bread, halved lengthwise
1 cup Manchego Cheese, shredded
1 tbsp. Fresh Parsley, chopped

Directions:

In a small bowl, mix the butter, olives and garlic together.  Spread the mixture over the cut sides of the French bread evenly.  Sprinkle cheese evenly over the mixture.  Place the bread on a baking sheet and put in a pre-heated 350 degree oven for about 10 minutes or until cheese has melted and browned slightly.  Remove from oven and sprinkle with parsley before cutting into 12 pieces and serving.

Note:               If you can’t find Manchego cheese, try substituting either Pecorino Romano or Asiago cheese for this recipe.
