Bleu Cheese Dip/Spread (GF)


Bleu Cheese Dip/Spread (GF)
(6 servings)


Ingredients:

2 tbsp. Walnuts
2 tbsp. Fresh Parsley, chopped
2 tbsp. Fresh Chives, chopped
½ cup Bleu Cheese Crumbles
8 oz. Cream Cheese, cold

Directions:

Place walnuts, parsley and chives in a food processor and process until finely chopped.  Place herb mixture in a small bowl and stir in the bleu cheese.  Set aside.  Place cream cheese in the food processor and process until smooth.  Add the herb mixture back into the processor with the cream cheese and process until well mixed.  Scape into a serving bowl and serve with GF crackers and fresh dipping vegetables.  Serve at room temperature.

Note:               Can be made up to 3 days ahead and stored in airtight container in refrigerator.

Note:               You can substitute Neufchatel cheese to reduce calories.  Also, you can use feta instead of bleu cheese for a milder flavor.
