Cornish Pie Pastry
4 cups All-Purpose Flour
1 cup Lard (room temperature), cut into pieces
1 cup Unsalted Butter (room temperature), cut into pieces
pinch of Salt
cold water to mix
Cut the 2 fats into the flour until it resembles a coarse grain. Add the salt and then start adding the water gradually until it works together into a ball without being sticky. Knead lightly and put aside in a cool place.
Note: The amount of water will vary for a variety of reasons. You’ll just have to play with it. Just add slowly until it is not sticky.
