Chocolate Chip Cookie Bites (GF)
(4 dozen)
Ingredients:
1½ cups Rice Flour
½ tsp. Baking Soda
½ tsp. Salt
¼ cup Unsalted Butter, room temperature
½ cup Sugar
½ cup (lightly packed) Brown Sugar
½ tsp. GF Vanilla Extract
2 large Fresh Eggs
1 cup Nestle Toll House Semi-Sweet Chocolate Morsels
½ cup Chopped Nuts
Directions:
Combine rice flour, baking soda and salt in a small bowl. In a large bowl, beat butter, sugar, brown sugar and vanilla extract until light. Add eggs one at a time, beating well after each addition. Gradually add rice flour mixture until combined. Stir in morsels and nuts. Cover and refrigerate for one hour. Roll dough into ¾ inch balls and place 2 inches apart on baking sheet covered with parchment paper. Place in a pre-heated 375-degree oven for 8-10 minutes or until golden brown. Cool on baking sheets 2 minutes before removing from parchment paper to wire racks to cool completely. Store in airtight container.
Note: It’s your choice on what chopped nuts to use in this recipe. I prefer walnuts.
