Summer 2-Bean Salad


Summer 2-Bean Salad
(8 servings)


Ingredients:

2 cups Cannellini Beans, drained and rinsed
2 cups Black Beans, drained and rinsed
2 large Tomato, diced
1 medium Onion, diced
2 ribs Celery, diced
¼ cup Red Wine Vinegar
3 tbsp. Fresh Italian Parsley, minced
3 tbsp. Fresh Basil, minced
½ tsp. Salt
½ tsp. Black Pepper

Directions:

In a medium bowl, gently toss all ingredients until well combined.  Refrigerate at least 2 hours before serving.  Toss gently again just before service.

Note:               You can use any combination of beans that meet your taste profile.
