Cheesy Lasagna Soup
6 (servings)
Ingredients:
1 can (28 oz.) Whole Tomatoes, drained
1 lb. Ground Chuck
1 clove Fresh Garlic, minced
1 tbsp. Dried Minced Onion
1 can (14 oz.) Tomato Sauce
3 cups Chicken Broth
2 tbsp. Brown Sugar
2 tsp. Italian Seasoning
¼ tsp. Salt
¼ tsp. Black Pepper
2½ cups Dry Lasagna Noodles, broken into pieces
1 cup Parmesan Cheese, grated
1 cup Mozzarella Cheese, shredded
Directions:
Puree the drained whole tomatoes in a blender and set aside. In a large sauce pan or Dutch oven, cook meat with garlic and dry onion included until done over medium-high heat. Drain fat and to pan. Now add pureed tomatoes, tomato sauce, chicken broth, brown sugar, Italian seasoning, salt and pepper. Stir to combine and bring to a boil. Reduce heat to medium and simmer about 10 minutes. Add the broken lasagna noodles and cook until tender, about 10-12 minutes. Stir in Parmesan cheese and divide between 6 bowls. Divide the mozzarella cheese equally over the bowls of soup and serve.
Notes: You can always use Italian sausage, ground pork or some other ground meat instead of the ground chuck. On some combination of the meats.
