Strawberry-Rhubarb Cake

Strawberry-Rhubarb Cake
(8-12 servings)


Ingredients:

1 lb. Fresh Rhubarb, ½ inch slices
1 cup Sugar
1 (3 oz.) box Strawberry Jello Mix
1 box Yellow Cake Mix
1 cup Water
¼ cup Butter, melted

Directions:

Spray a 9x13 baking dish and spread the rhubarb evenly over the bottom. Next, in order, evenly sprinkle the sugar, than jello mix and finish with the cake mix. Carefully pour the water over all and then do the same with the melted butter. Place in a pre-heated 350 degree oven for 45 minutes. Let cool slightly and serve. This dessert can be served warm, room temperature or cold. I like mine warm with a little ice cream over it.

Note: If you wish, experiment with different jello mix flavors and/or cake mixes.
