Southern Macaroni Pie (GF)
(8-12 servings)
Ingredients:
3 tbs. Shortening or Butter
1 lb. Gluten-Free Elbow Macaroni
6 large Fresh Eggs, beaten
3 cups Milk
1lb. Shredded Cheddar Cheese
8 oz. Cream Cheese
½ tsp. Salt
¼ tsp. Black Pepper
½ cup Gluten-Free Bread Crumbs, Corn Flakes or Potato Chips
Directions:
Use shortening to grease a 9x13 baking dish and set aside. Cook GF macaroni according to package directions but only for 8 minutes. Then let set in the water for 4 more minutes. Now drain and rinse with cold water. While macaroni is cooking, cube cream cheese and mix eggs, milk, salt and pepper together. To assemble, place half of the macaroni in baking dish. Follow this with half of both cheeses. Repeat the process and then top all with egg mixture. Finally, sprinkle the GF topping of choice (bread crumbs, corn flakes or potato chips) over mixture. Place the baking dish in a pre-heated 350-degree oven for 30 minutes. Remove dish and stir to blend in the cream cheese. Return to oven and continue baking another 30 minutes or until a knife inserted comes out clean. Remove and let rest 10 minutes before serving.
Note: You could use penne pasta or another shape of choice for the macaroni. Also, you could use Colby or another cheese of choice in place of the cheddar. Use your imagination and your child’s favorite ingredients.
